EXTRA CHEEZY VEGAN MAC

Did you say EXTRA cheezy? This recipe for extra cheezy vegan mac has us counting down the hours until lunch time! ⁠
Ingredients
  • 1 box Blue Evolution Penne with Superfood Seaweed⁠
  • 1 small butternut squash, peeled and diced ⁠
  • 6 Tbsp Trader Joe’s vegan cashew fiesta dip⁠
  • 4 Tbsp nutritional yeast⁠
  • *Optional: Spices to taste + a splash of unsweetened almond milk if needed. ⁠
Method
  1. Roast (for 45 minutes in the oven) or steam (for 15 minutes in boiling water) the butternut squash until soft.
  2. Then, add to your food processor (or blender) with the other two ingredients to create your cheese sauce.
  3. Use a splash of plant milk if you need to thin and any additional spices (if you’d like).
  4. Cook Blue Evolution Seaweed Pasta according to instructions on the box, then drain and combine the sauce and pasta. Enjoy!⁠
