MATCHA POPCORN GREEN TEA COOKIES

Bake up a batch of homemade cookies with a crunchy topping using one of your all-time favorite snacks, Blue Evolution Organic Seaweed Popcorn.
Ingredients:

2 cups Blue Evolution Toasted Sesame Popcorn

1 cup white chocolate chips

2 cups AP Flour

1 tbsp matcha powder make sure the powder is designed for baking

1 cup packed brown sugar

1/2 tsp salt

3/4 cup melted, unsalted butter

1/2 cup white sugar

1/2 tbsp vanilla extract

1/2 tsp baking soda
Method:

Preheat oven to 325 degrees.

Using an electric mixer on low, mix brown sugar, butter, and white sugar. After the mixture is blended, add vanilla extract, egg, and egg yolk and mix until creamy.

Mix together flour, baking soda, salt, and matcha.

Lightly chop popcorn into smaller pieces.

Add flour mixture into the batter mix until just blended. Add in white chocolate and popcorn.

Grab a baking sheet, top with foil or parchment paper. Add cookie dough to the sheet, about 1 large tbsp each, and leave at least 2 inches of room between each cookie.

Bake 10 minutes.
