Choose your favorite white fish for this delicious aguachile recipe featuring by Blue Evolution Executive Brand Chef Maylin Chávez, featuring Blue Evolution Sea Lettuce.
Yields 6 portions
Sea Lettuce Aguachile:
2 oz. young ginger
2 oz. fish sauce
2 oz. avocado oil
2 oz. unseasoned rice vinegar
2 serrano pepper
6 garlic cloves
1 oz. black pepper
1 bunch packed cilantro
5 oz. Blue Evolution Sea Lettuce, plus 2 oz. more for garnish
Juice of 3 limes
6 ounces of water
Sea salt to taste
Method:
Blend all ingredients, set aside.
For the fish:
Use 1 lb. white buttery fish such as Kampachi, Black Cod, Halibut, Rockfish, Hamachi
Thinly slice fish and arrange on plate, spoon aguachile over fish, and garnish with avocado, sea lettuce, radish, and any crunchy bits you would like.
