VEGAN ROASTED GARLIC ALFREDO

Let’s talk about self care. We know, it’s a trending topic, but what exactly IS self care? Well, it’s subjective! For us, it means setting your future self up for success and giving yourself a little extra love. Self love looks like meal prepping for the week so you have nourishment while at work, drawing yourself a bath so you can sleep through the night better, or simply blocking off one night a week in your calendar for some alone, chill-time. Now go love yourself a little more by making this delicious plant-based Alfredo sauce to go with your lunch tomorrow!
Ingredients:
  • ¼ cup roasted garlic cloves (you can buy roasted garlic in the olive bar at your local grocery store)⁠
  • 1 box Blue Evolution Rotini with Superfood Seaweed⁠
  • 1 cup raw cashews, soaked in water 4-8 hours, drained and rinsed⁠
  • 1 to 1 ½ cups unflavored and unsweetened almond milk⁠
  • 2 Tbsp lemon juice⁠
  • 1 tsp salt, plus more to taste⁠
  • Fresh herbs for garnish⁠
Method:
  1. Combine roasted garlic, soaked cashews and ¼ cup of almond milk in a food processor. Blend the mixture to a smooth paste.
  2. Add a splash of almond milk, along with lemon juice and salt. Blend the mixture again until smooth. Add salt to taste.
  3. Cook Blue Evolution Pasta according to instructions on the box. Pour roasted garlic alfredo sauce over the pasta and toss to coat. Add a splash of almond milk or as needed.
  4. Divide the pasta in bowls and top with sautéed veggies (if you have some on hand) and fresh herbs. Enjoy!⁠
