Ingredients:
-
1 ½ cup rolled oats
-
1 cup salty crackers, finely crushed
-
1 ½ cups unsweetened coconut flakes
-
1 cup sesame seeds, toasted
-
1 package of Blue Evolution Dried Alaskan Wakame, finely chopped or ground
-
1 ¼ cups smooth peanut butter
-
½ cup honey
-
1 tsp pure vanilla extract
-
¼ cup miniature chocolate chips
Method:
-
In a large bowl, combine oats, crushed crackers, coconut flakes, sesame seeds, and seaweed.
-
In a separate bowl, combine the peanut butter, honey, and vanilla extract.
-
Microwave the peanut butter and honey mixture for 30 seconds, then add the two mixtures together and stir well.
-
Allow the mixture to cool for at least 10 minutes, and then add the miniature chocolate chips.
-
Mix until the chips are evenly distributed throughout.
-
Scoop the mixture onto your hand and mold into a rectangular, granola bar-type shape OR into balls!
-
Optional: Roll in sesame seeds or coconut to keep them from sticking together.
-
Wrap the oat bars in parchment paper and store in the refrigerator until firm. Serve chilled and enjoy!
